Pickerel is one of the most sought after and prized freshwater fish in North America. It is esteemed for its light succulent flavour with a fine, flaked texture.Provided to us by one of Spring Hills Trout partner fisheries. It comes from a wild fishery that is internationally recognized as sustainable by the Marine Stewardship Council, which means it’s good for the environment and safe to eat. 200 g on average

The Connection series explores the magic of the world we can't see beneath our feet and in the air. So much of our planet relies on things we don't see and truly understand. Some trees never give up. On the Niagara Escarpment there are White cedar trees that are hundreds of years old. They are small, wizened trees clinging to the edge of the rock face. A seed nestles into the smallest of soil dusted cracks and sprouts roots. The roots spread, enabling the tree to adhere to the rock face. There the trees appear to grow on bald rock.
