I just discovered how to make the most delicious Halloumi Fritters, and I want to share this easy, flexible and super-tasty market recipe for brunch, lunch, snacktime or supper!
Halloumi Vegetable Fritters
First, grate a medium zucchini and a largeĀ carrot, and put them in a colander lined with a clean tea towel to absorb some of the moisture for a few minutes.
Grate a good-sized round ofĀ HalloumiĀ into a large mixing bowl, add a handful of corn kernels (optional) and the grated vegetables.
Chop and add 2 green onions or shallots, and chives, parsley, or other fresh herbs if you have some. Mix all well.
Add 2 lightly beatenĀ eggsĀ and a generous handful ofĀ flourĀ (or a bit more if the mixture is not sticking), half a teaspoon of salt, and a couple of shakes of yourĀ favouriteĀ spice, such as smoked paprika, harissa, and or black pepper.
Heat a few tablespoons of grapeseed,Ā sunflowerĀ or olive oil in a large, heavy pan. When the pan is well-heated, scoop spoonfuls of the halloumi mixture onto the pan and press down with a fork.
Fry until well-browned on both sides.
Place on a plate covered in paper towels to absorb any excess oil. Serve warm, with any of: aioli,Ā chutney, sour cream orĀ hot sauce. Best eaten immediately, but they can also be reheated in the oven.
