Zealous for Zucchini

Happy Sunday Everyone! Here’s wishing you a fruitful week ahead.

Anne is away this week. I would like to take this time to introduce myself. My name is Aanastasia and I am the Data Entry Clerk at the Dufferin Grove Farmers’ Market. I recently joined the team to assist with our transition to an online/Web Store based market and to ensure that our operations run smoothly behind the scenes. That being said, you might interact with me when I respond to your email or answer your call. You might also see me pop in and out of the Market Depot on Thursdays. I have shopped at the Dufferin Grove Organic Farmers’ market for years and I am pleased to contribute to our community during this time.

I would like to make another introduction: Rich in fibre! Coming at you with ample amounts of vitamin A! The only fruit that starts with the letter “Z”. The mild, the humble, the delicious: Zucchini!

And, yes! Botanically, zucchini is a fruit though it is commonly used and served as a vegetable. Zucchini is one of my favourite squashes and it would be an understatement to remark that I was excited to see that our vendors, Thorpe’s Organic Produce and Marvellous Edibles now have zucchini and other summer squashes available for purchase.

Last week, I managed to purchase the last yellow zucchini available. By the time I finished slowly perusing other vendors’ product lists, researching the difference between the flavour profile of Balsam Fir Syrup vs Birch Syrup from Forbes Wild Foods and contemplating if I really needed more maple syrup right then with a more-than-half full bottle currently in my fridge – there was only one left. I ended up ordering a couple of green zucchinis and a pint of assorted summer squash among other market goods.

I look forward to testing out this recipe for Zucchini Pie:

Ingredients

  • 3 Cups Zucchini, sliced on the thinner side from Thorpe’s Organic Produce
  • 4 Eggs from Bees Universe
  • 1 cup Pre-mixed Baking Mix
  • 1 Small Onion, diced
  • 1/2 Cup Vegetable Oil of your choice
  • 1 Cup Shredded Cheese

**Add some fresh basil or sage from Sundance Harvest for a more savory dish!**
